Review: Hubbell & Hudson Bistro & Market in The Woodlands

One of my favourite fellow bloggers is Albert Nurick, aka HTownChowdown, who lives up in The Woodlands.  Albert is all over the  place, but he is very big on promoting the numerous great dining and food places up in our Northern Suburbs.  Albert is quite correct that ITL (inside the Loop, aka I-610) is not the only place where you can find great gourmet food in the Houston area, though that perception sometimes persists for reasons I cannot fathom.  One of Albert's favourite places to eat and shop is Hubbel & Hudson Bistro & Market over in The Woodlands Waterway, just South of The Woodlands Mall.  I've passed it by many a time and it's been on "my list" for a while.  However recent events found me up near that area on a Friday afternoon around lunchtime, and I figured no time like the present, time to see what Albert has been raving about all this time.

First a little background from their website:

Blackberry Smash
Hubbell & Hudson was born out of a desire to bring a world-class culinary destination to The Woodlands, Texas. Our founder envisioned a culinary world where market, bistro and catering co-exist seamlessly under one roof. It makes perfect sense—provide a never-ending stream of the finest and freshest market ingredients to the creative minds of renowned chefs. From this, Hubbell & Hudson was born.

The Viking Cooking School was a natural extension of this concept, bringing one of only two cooking school locations to Texas. Together, the market, bistro, catering service and Viking Cooking School offer the food-obsessed the ultimate opportunity to dine, experience, learn and be inspired.
Wagyu Burger with Lemon Rosmary pomme frites
Albert went on about the Bistro as well as the Burger Bar, and I'd intended to go to the Burger Bar. However, someone else I know had mentioned the two burgers the bistro had for lunch, and though I took a bit of time to explore the Market, I really wanted to sit down and be waited on, so into the Bistro I went.  Their Lunch Menu was quite extensive--with a very diverse selection of gourmet sides, a very thorough wine list, and interesting beverages like the Blackberry Ginger Smash (blackberries & strawberries, lime juice, ginger syrup, topped with ginger beer).  As I'd had burgers on my brain, I looked at the two burgers they had and decided that the Wagyu Burger (smoked gouda, baby arugula, crisp prosciutto di parma, whole grain dijonnaise, toasted english muffin) would satisfy my craving.

Good Service at Hubbell & Hudson Bistro
The burger had that buttery smooth chewiness I expect from Wagyu beef, the smoked Gouda cheese was a nice contrast to the sweetness of the beef, the prosciutto is like bacon on steroids--salty, savoury, sweet and chewy; this is the 2nd English muffin burger in 8 days (since the Queen Victoria last Friday) and oh yeah, it works.  The lemon rosemary fries were crispy and had that herbal essence of Rosemary that adds to the crispy potato.  A clear winner all the way around.  I also found the Blackberry Ginger smash to be quite refreshing and worked well with the burger.

Say "Fromage!!!" at Hubbell & Hudson Market
Of note, Dustin my server was attentive but not hovering at all.  He hit his callbacks just fine and the Manager also paid me a visit to verify the quality of my meal towards the end of it, and validated my parking. (FYI: you get 4 hours parking in the garage validated when you are a customer at Hubbell & Hudson, a very nice perk!)  After this experience, I can see exactly what Albert was raving about.

I also took some time roaming around the Market section--found it well stocked and felt like a cross between Phoenicia, Central Market, Trader Joe's and World Market.  It had many unique fresh food items, high end coffees and cheeses, and there was a very healthy crowd shopping there.  I will have to do a full market tour and blog it up for all of us down South of the Woodlands who might want to consider driving 30 to 90 minutes north to the Woodlands for a shopping spree!
